Origin and Production of Green Tea

Green tea is obtained, the same as black tea, from tea plants. In contrast to black tea, however, it does not go through the fermentation process. During the wilting process it loses enzymes and ferments, which are destroyed by steaming. Green tea therefore does not obtain red shades, but retains its original olive colour. The taste of green tea is more marked and it can be bitterer than the taste of black tea. This is because green tea contains more tannins.

Thanks to its anti-oxidant content, green tea protects the body from the action of free radicals, helps with high blood pressure, prevents hardening of the arteries and gets rid of cholesterol in the blood.
