White tea obtained its name because of the white fuzz that covers the undeveloped tea buds.
How is white tea obtained?
White tea is harvested at the start of spring, only for a very limited period and only in good weather. Only young tea buds are suitable for white tea, sometimes with two neighbouring leaves that are picked by hand. The careful selection of tea buds makes white tea a gem among teas.
The production process for white tea comprises two steps. The tea leaves are allowed to wilt and then dried at a low temperature. In contrast to the production of other teas, the tea leaves for white tea are not rolled up. They are only slightly oxidised.
